I think we can regard this as solved - sort of - since the KDE upgrade will fix it, eventually.
Finding a workaround is not worth the effort

Setting another path in the gnome-terminal settings is not possible and the xterm pops up with the correct home path - and since this also affects guake (as you state - I have not tested it) it is probably KDE (not Gnome) related - urxvt also pops with the correct path![]()
Makes me wonder what guake and gnome-terminal have in common...
And this seems to be an inherited weakness since the behavior is exactly the same in Mandriva 2010 the Guake terminal pops up with Documents as defaultMaybe it is a feature?
A feature that Arch does not have.....
